Since 2018, The Soup Has Gained Tremendous Recognition

The original recipe was first posted online in 2017 by 365daysofcrockpot.com culinary writer Karen. As it should have been, it was simply known as Slow Cooker Creamy Tortellini, Spinach, and Chicken Soup. But with Reddit, it now goes by the name “Upvote Soup.”

After a Redditor shared Karen’s recipe, which received hundreds of upvotes (equivalent to Instagram likes), it quickly gained popularity. It didn’t become The Soup until administrators decided to outlaw the term “Upvote Soup.” In order to prevent people from asking for upvotes on the Slow Cooker subreddit, moderators banned the term.

Ingredients

  • 1/3 cup all-purpose flour
  • 1 medium yellow onion, diced
  • 1 Tbsp dried basil
  • 2 cloves of garlic, minced
  • 2 Tbsp tomato paste
  • 3 Tbsp olive oil
  • 4 cups chicken broth
  • 2 (14.5 oz) cans of petite diced tomatoes
  • 1 – 1 1/2 lbs boneless, skinless chicken thighs
  • 1 tsp salt
  • 1/2 tsp pepper
  • 4 cups frozen (or fresh) cheese tortellini
  • 3 cups packed spinach (adjust to your tastes)
  • 1/2 cup parmesan cheese
  • 1 cup heavy cream or 1 cup half and half

  • The onions, garlic, basil, tomato paste, and olive oil should be microwaved for five minutes and stirred well every 90 seconds.
  • The microwaved paste should be added to the slow cooker.
  • In the slow cooker, add tomatoes, chicken, broth, salt, and pepper.
  • Mix all the ingredients and paste by stirring well.
  • Cook by covering for 4 to 6 hours on low or 3 to 4 hours on high (or until the chicken is tender).
  • When the chicken is done, remove it from the cooker using a fork.
  • The cream should be warmed up either on the stove or in a microwave.
  • In the slow cooker, combine tortellini, spinach, parmesan cheese, and warm cream (heating the cream prevents it from curdling when poured into a hot slow cooker mixture).
  • Put the chicken to the slow cooker after being chopped or shredded into bite-sized pieces.
  • The tortellini should be fully cooked after 10 minutes of cooking the mixture on high.
  • Pour in a bowl and serve piping hot upvote soup.
