History of the Famous Cheese Sandwich:
Nick Rangos of Aiken, South Carolina, was the original originator of the Masters’ pimiento cheese sandwich. For 45 years, he provided the event with the Southern classic, until the club switched contracts and began employing Wife Saver. It is a local restaurant chain that already made another master’s favorite, fried chicken sandwiches. Nick refused to disclose his secret recipe, so Wife Saver was tasked with recreating it.
Fortunately, they got quite close. However, another vendor shift in 2013 resulted in another secret recipe being withheld, further alterations to the spread, and, eventually, some very disgruntled pimiento cheese sandwich customers. Some said there was more heat, but others agreed that adding extra mayonnaise made it gummy. Whatever the case, it wasn’t the same, and many weren’t happy about it.
The original version started out as something quite different: the marriage of cream cheese and canned pimentos, two popular and newly-available products. In the 1870s in New York State, farmers started making a soft, unripened cheese modeled after the French Neufchâtel which titillated people.

The $1.50 pimento cheese sandwich, as much a part of the annual golf tournament as Amen Corner, Magnolia Lane, or skipping balls on 16, is a mainstay at Augusta National every April and has been for as long as practically anybody can remember. Fortunately, certain things haven’t changed.
Price of The Pimento Cheese Sandwich:
It wasn’t always $1.50 ($3 if you add chips), but it’s thought the Southern-style cheese wedge first appeared at the Masters in the late 1940s. During this time, husband-and-wife team Hodges and Ola Herndon brought sandwiches made in their nearby kitchen to the course and sold them to pimento-craving patrons for a quarter apiece.

Pimento Cheese Sandwich Ingredients:
- 2 cups of shredded cheddar cheese
- 1 cup shredded Monterey jack cheese
- 4 ounces cream cheese
- 1/2 cup mayonnaise
- 4-ounce jar pimentos diced in the jar
- 1 tablespoon very finely minced onion
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Process:
- In a medium mixing bowl, combine all of the ingredients and whisk until smooth and creamy. Refrigerate for at least an hour to allow the mixture to firm up.
- Serve on white bread
