Her family chose to go to Poland in pursuit of a better life while Venezuela experienced political and economic unrest. Veronica continued her training and was introduced to several martial arts forms in this new setting.
On December 25, 2022, Veronica married Dan Hardy, a former UFC competitor.

Veronica Hardy had a 5-0-1 professional MMA record before joining UFC. She participated in a number of European regional campaigns. In 2016, she signed with the UFC after the organization took notice of her outstanding performance on the regional circuit.
On September 3, 2016, Hardy took on Ashlee Evans-Smith at UFC Fight Night 93. In the third round, she was defeated via technical knockout.
On May 19, 2018, Hardy took on Andrea Lee at UFC Fight Night 129. It was decided unanimously that she lost the bout. She received the Fight of the Night bonus for this battle.
On December 21, 2019, Hardy was supposed to take on Amanda Lemos at the UFC on ESPN+ 23. She was supposed to fight Ariane Lipski on November 16, 2019, at UFC on ESPN+ 22, in place of Priscila Cachoeira, who tested positive for a diuretic, but her fight with Amanda Lemos was cancelled.
